Horse Racing Season/Start with Derby Day

Look at these yummy tomato basil Bruschetta’s! These are colorful, easy, healthy and so good with everything. They are not overpowering on the palette so any drink or other appetizer will be fine to serve with it.

To make ahead, make the tomato mixture, refrigerate, and keep separate until ready to serve. The longer the tomato mixture sits, the better it will taste. Toast the bread, let it cool, and place it in Ziploc until ready to serve. Easy to take to a party. Just combine all and serve. You will be a star for serving these. They look so complicated!

Take these to your next Derby party or any gathering. Take them to your in-laws or serve them with drinks when your date or friends come over for dinner. Remember, Cook for Love. Enjoy!

· Tomato Basil Bruschetta
· 1/8 cup olive oil
· 1 1/2 tablespoons chopped fresh basil
· 1 1/2 to 2 garlic cloves, minced
· 1/4 teaspoon salt
· 1/8-1/4 teaspoon pepper
· 2 medium tomatoes, diced
· 1-2 tablespoons grated Parmesan cheese
· 1 small loaf (1/2 pound) unsliced petite French bread

In a large bowl, combine oil, basil, garlic, salt and pepper. Add tomatoes and toss gently. Sprinkle with cheese. Refrigerate at least 1 hour.

Bring to room temperature before serving. Cut bread into 24 slices; toast under broiler until lightly browned. Top with tomato mixture. Serve immediately. *(Cut recipe in half if it is just two of you)
