This was a video we shot for Cinco de Mayo for Mindful Living Network. Not only is this a great Latino inspired dish, but it’s a healthy one, and easy to make any day of the week. It’s light and timely for the spring/summer season. It is festive for date night or great to serve for a dinner party. You could serve the sauce on the side, the toasted tortilla’s on a plate and the sautéed fish on a platter, all on a buffet. Topping it with fresh minced green cilantro gives it a pop of color too that makes it even more delicious as we do eat with our eyes first, right?

Fish Tacos – Ingredients
6 Tilapia filets
6 toasted flour tortillas
For the sauce:
1 Tbsp ground coriander
1/2 tsp ground cumin
1 cup sour cream
Few drops of Sriracha or sprinkles of cayenne for heat
1 small tomato, diced, seeded membranes removed
1/4-1/2 tsp sea salt – to taste
1/4 tsp pepper or to taste
squeeze few drops of lime juice to taste
Mix all together (tastes better if make ahead)
Fish Taco Toppings:
Chopped fresh cilantro
1/4 small green or purple chopped cabbage
optional: serve with 1 chopped avocado
serve with 1 lime, cut in small wedges
Optional: serve with Gotja or mixed bag of shredded cheese

Directions
Sprinkle both sides of the fish with same spices as above: coriander, cumin, salt and pepper. The longer fish dry marinates, the better the flavor. Fish can season overnight in fridge for even better flavor.
6 small white corn tortillas, briefly sautéed, browned in an oiled pan, set aside on a plate.

Sauté fish in a hot oiled pan, with 1 Tbsp Grapeseed oil, over medium high heat to get a golden brown color on both sides. Cook about 3 minutes one side, until flakes then flip, then sauté about 2 minutes.
Place shredded cabbage in the middle of each toasted flour tortilla, place one cooked filet on top of each cabbage stack, then top fish with the spiced sour cream mixture. Can also add chopped avocado for more flavor and texture, and top with cheese if desired. Final topping- fresh minced cilantro. Enjoy!
Great for a dinner party, get together, or nightly dinner. Cut recipe in half for a dinner for two. Have fun with this. You won’t make any mistakes.
