I have wanted to figure out a good, quick, simple recipe for granola.  I must have finally succeeded because everyone, including my hubby, demands one of these bags of freshly baked granola.  It is so easy!

I decided to make a huge batch while I was at it.  So I preheated the oven to 350 and combined approximately 1 bag of Trader Joe’s flax seeds,  2.5 cups of oatmeal toasted,  6 oz or about 2.5 cups almonds,  2 cups of cashews already halved and toasted,  2 cups sunflower seeds, 1 bag of Trader Joe’s raisins, and 1 bag of dried cranberries.  I combine all ingredients in a huge bowl, while the nuts and oatmeal are still warm from being browned on a cookie sheet  in the oven.  (I toasted the nuts and oatmeal approximately 5 minutes.  Then put both into the bowl.  Then I pour enough honey to adhere all seeds and dried fruits together while stirring with a large spoon.  I found some wonderful NC home grown honey  and used it for it exceptionally mild yet herbal taste.  Then I pour out all honeyed granola onto the cooking sheets and back for about 10 minutes.  The honey expands and then contracts after they cool.  Add as much or little as you please depending on how you like its texture.

This is so good and a great alternative to heavy meals during the day, tops yogurt, or perfect as a snack anytime.  Its nutritious,  quick, and easy to store.  As long as you keep everything in one large bowl, you don’t have to worry about honey dripping on the counters or making any kind of a mess.

 All together, this makes a healthy, tasty snack.  It has plenty of protein and fiber.  All fresh natural ingredients.    Try it!
